Caribbean meets Greek

As a rice lover, my go to food in the city is hands down the chicken and rice platters from the halal food trucks. Believe it or not what I love the most about the platter is the white sauce. The white sauce is a combination of Tzatziki sauce, which is a Greek cucumber yogurt sauce, and mayonnaise. It inspired me today and I went in! I’m not going to make your typical “chicken and rice” and it will be far away from being a Halal dish.  I will make the white sauce along with rice and chicken, which will contain some Caribbean flavors.

Here are the recipes:

White sauce or Tzatziki sauce

1 cucumber

Garlic powder or 1 garlic clove

3 tablespoon of lemon juice

1 tablespoon of salt and pepper

3 cups of Greek yogurt

½ criollito cube seasoning

1-      Peel and cube your cucumber then sprinkle with salt and let sit in a covered bowl for about 30 minutes. The salt will draw the water out of the cucumber.

2-      After the 30 minutes, drain your cucumbers then add them to your blender or food processor. Add your lemon juice, your garlic and your salt and pepper. Blend well then add your yogurt and blend again.

3-      If you used a thicker Greek yogurt, you should have a thick sauce.  If not, your sauce will be thinner. Put your sauce in a container and let it sit for two hours before serving.

Tip: the white sauce will keep in the fridge for about 5 days. Remember to consistently drain off any water and always stir before use.
