This is the rice i use. You can find it in any ethnic supermarkets.
2 cups of water
1 cup of white rice
2 tablespoon of olive oil
1 tablespoon of salt
1- Heat up 2 tablespoons of olive oil in a sauce pan. Add your salt and scallion. Let it fry until scallion turns slightly yellow.
2- Add your water and when it boils, add your rice.
TIP: Little Haitian tip given to me by my grandma. When you add your rice in the boiled water, if the tip of the rice is over the water , the amount of water is perfect if the rice is slightly showing over the water . You will have perfectly fluffy rice. If the rice is completely submerged in water, you might have added too much water and your rice will come out mushy.
3- Let your rice boil on high heat until the water is almost dry, then cover your sauce pan and lower your heat to low heat.
4- After about 30 minutes of cooking in low heat, your rice should be ready to eat.
